From Wally’s Holler to Honey Barrel

In 2018, bourbon became more than just a drink — it became a passion.

It started when my cousin Vince, who runs a restaurant in Illinois, did a Buffalo Trace single barrel pick. He named it after our grandfather, Wally, and that bottle became named Wally’s Holler. That bottle was one of my first forays into bourbon — and from that moment on, I was hooked.

What began as a curiosity quickly turned into a deep appreciation. The stories behind each barrel. The subtle differences between distilleries. The way bourbon brings people together. With an entrepreneurial spirit and a dream, Honey Barrel is now a reality — a place where great whiskey, great company, and good vibes come together under one roof.

One might think it would take a little convincing of my wife to make it a reality.  But no, she’s the one who actually pushed us forward with this adventure and together we bring Honey Barrel to you.
